Appetite For The Arches – A Unique Fundraising Dinner with Central Florida Chefs Using McDonald’s Ingredients

Coming up on March 1 is the Appetite for the Arches a very unique fundraising dinner event. The dinner will feature a number of Central Florida’s talented chefs and restaurants, all creating dishes using McDonald’s® ingredients for guests to sample. Funds raised will benefit the Ronald McDonald House Charities® of Central Florida to provide a home away from home for families with critically ill children.   I had a chance to preview some of the dishes from some of Orlando’s most celebrated chefs. James and Julie Petrakis of The Ravenous Pig and Cask & Larder, Kathleen Blake of The Rusty Spoon, and Kevin Fonzo of K Restaurant. They ALL made great dishes using McDonald’s products and I was pleasantly surprised. They really transformed the ingredients into dishes that represent their style in each of their restaurants. The full list of chefs are from around Central Florida, with a guest from Miami. Following dishes are just a preview of what’s to come on Saturday, March 1, from 7 to 10 p.m.at the Orlando World Center Marriott. …

The Ravenous Pig – Chef’s Tasting Menu

The Ravenous Pig is now featuring a Chef’s Tasting Menu during their dinner hours. The five course tasting menu with amuse bouche is developed by Executive Chef, Joseph Burnett, and features seasonal ingredients and creative culinary ideas. The tasting debuted this past mid-October and has an optional wine pairing and cheese course available to add to the dining experience. The menu is set to change monthly with the different seasons and products being sourced. I got a chance to try their inaugural Chef’s Tasting Menu which is what I experienced here in this post. Please note that the following photos and dishes are from the Fall menu and they are rolling out the new Holiday Chef’s Tasting Menu later this week. This post gives an idea of the creativity and use of ingredients. Each course has been thoughtfully executed and beautifully plated.   (click image to enlarge) Amuse Bouche: Sunchoke custard, layered with truffle crema and trout roe, garnished with sunflower seed tuile The Amuse Bouche kicked off the tasting with a playful sight and spiced …

The Ravenous Pig: Seasons of Florida – Cookbook Release Party

James and Julie Petrakis, the Chefs and owners of The Ravenous Pig and the new Cask & Larder restaurant, released their new cookbook The Ravenous Pig: Seasons of Florida. To celebrate, they hosted a cookbook release party at their Ravenous Pig restaurant in Winter Park, FL. The event featured hors d’oeuvres from recipes in the book, beer, wine, and signed first-edition copies of the book. The official cookbook release was a few days after this event.   (click image to enlarge) The cookbook features beautiful photography of the Florida food recipes, the products used, and the people in the restaurant community they have built. You get a sense of who they are, the quality of food they create, and (for me) a new view of Florida food culture. How do they cook? In seasonal fashion, of course. The focus is on the produce that is in season during that time of year and what is available on the local Florida coast as far as seafood. The combination leads you to create a fresh, local, and …

Pork Paradise – The Ravenous Pig – Orlando, FL

Happy New Year! It is said that eating pork in the New Year will bring good luck and history shows that many countries around the world observe this tradition. Although I had my pork feast a few days prior to the new year, its never too early or too late to celebrate. The Ravenous Pig does a great job serving a menu featuring pork in many different ways. This American Gastropub is known for their menu offering burgers, steaks, drinks, and of course pork dishes. A recent trip to The Ravenous Pig for a friend’s birthday gave us a chance to sample a variety of rich and savory dishes.   (click image to enlarge) The Ravenous Pig Old Fashion – Bacon Infused Buffalo Trace Bourbon, Vanilla Maple Syrup, Bitters A great way to start off the night, The Ravenous Pig Old Fashion is a twist on the traditional Old Fashion drink. While having a piece of candied bacon in a drink may be strange to some people, it’s actually a well paired garnish against this …
