Premium Japanese Wagyu beef is a delicacy that is making its way to the U.S. and the Four Seasons Resort Orlando at Walt Disney World Resort is debuting a special grade of Matsusaka beef today. Available at Capa Steakhouse, a special tasting menu called “From Matsusaka with Love” features a three course menu for two guests. This special menu is offered from February 10 to 15, 2016 and it’s just in time for Valentine’s Day. If you’re looking for special dining plans, this would be a good one to experience. Matsusaka beef from Japan is officially being introduced to the U.S. market with this menu.

We were invited to sample what many call the best wagyu (Japanese beef) in the world. This beef was flown in from the Matsusaka region of Mie Prefecture, Japan. It is ranked number 1 because the melting point of the fat is very low, and it has the highest quality of rich marbling. The sashi is the white parts of fat in the meat that give wagyu its signature look. The Matsusaka cattle are fed beer to stimulate their appetite. They are fattened for over 900 days, regularly massaged and raised in individual rooms to reduce stress. The highest auction price for a Matsusaka cow to date was about $500,000 in 2003. We were very excited for the rare chance to taste the Matsusaka wagyu in the States.

The first dish allowed us to experience Matsusaka wagyu in the style of sushi. The chef prepared New York Strip Takaki Nigiri, Filet Flash Seared Sushi Roll, Raw Filet Maki Roll and a Hand Roll for us to sample. As soon as the wagyu touches your mouth it begins to melt. It is extremely soft and has a buttery texture. It was sliced perfectly, and I enjoyed it with a touch of wasabi.

The next dish was 48 Hour Sous Vide Short Rib. It was served with a Red wine natural reduction and Baby Tatsoi. This dish showed us that you don’t have to eat wagyu in the traditional Japanese manner, and it quickly became one of our favorites.

The main dish arrived with a tasting of Grilled New York Strip, Ribeye and Filet seasoned with Maldon Sea Salt. This was the ultimate steak experience. It was unbelievably tender and flavorful as you would imagine from a cow that was massaged and pampered its entire life.

For dessert we enjoyed an Open Face Macaroon with Matsusaka Green Tea Cream and Raspberry Jelly. This was a creation for Asst. Pastry Chef Peter Whitley.

The representatives from the Matsusaka region that were here showed us how deeply involved they are in the art of raising their cattle. They go to extreme lengths to ensure the development of rich marbling in their beef which translates into the best wagyu in Japan.
